Certified organic grapes were machine harvested, destemmed then pressed immediately and chilled to cold settle for 48 hours. The clear juice was then carefully racked into a stainless steel vessels. The vessels were largely inoculated with specialist yeast, Alba Fria and Sauvage. A long, cool fermentation proceeded, to enhance the bright, vivacious aromatics of Pinot Noir. After a short period on lees, the wine was blended with small portions of Semillon and Pinot Gris, stabilized and filtered prior to bottling. Final Blend : Pinot Noir 78% : Semillon 11% : Pinot Gris 11%

A classic Pinot Noir dominant Rose, showing pretty notes of delicate summer berry fruits, interlaced with pear drop floral notes. The palate shows depth and concentration, yet remains vibrant and refreshing. A delicious drink!
